The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Combine all the components in a saucepan, heat until it reaches a simmer, agitating so the sugar melts. After that, take off the burner and let it to cool down fully. Pour into a sealable bottle, cap it and refrigerate it in the refrigerator, it can be stored for about a month.
To make Batch Mix: Mix every liquids into a large bottle, allow it to infuse for 60 minutes, then strain preferably using muslin, making it perfectly clear.
When ready to serve: Add 85ml from the cocktail base to a cocktail shaker filled with ice, and agitate gently for about 60 seconds to chill. Pour into an frosted cocktail glass or a similar vessel, top with the cranberries adding the final touch using a light spray of mandarin oil above the glass.
